    Lamb's Quarter

    When I was growing up, my front yard was full of lamb's quarter, and my
    father often added it to his salad. Lamb's Quarter, a European relative of spinach and beets, grows wild across North America and bears edible leaves
    that can be collected from spring until fall. Like spinach, it is edible
    either raw or cooked, and it is an excellent source of beta-carotene,
    calcium, potassium, trace minerials, B-complex vitamins, vitamin C, and
    fiber. It can be found along roadsides, in fields, and in yards and parks in both urban and suburban areas. Don't confuse it with epazote, though, which smells resinous and can be toxic in large quantities.
