    Camass Bulbs are found in the mountain meadows and swamps of Washington, Oregon, and Northern California. The flowers are blue. Bulbs are good roasted or deep-fried and were considered a delicacy among several Native American tribes including Blackfoot, Cree, and Nez Pierce. If time allows for slow-cooking, a full day of steaming or pit-cooking breaks down the Camass bulbs' bland complex carbohydrates into sweet fructose. When cooked this way, up to one-third of the cooked weight of the bulb can be sugar.
